Roasted Duck

ROAST DUCK
What could be better than having a duck on a chinese special day celebration? This year, Hilton Hotel provides a special roast duck – this is the duck with a shining reddish-brown skin seen hanging in the windows of a good Cantonese restaurant. The meat is definitely tender and moist, the skin is nearly crunchy, and the sauce itself completes the taste of the duck meat itself.

You can have it straight away or with rice or even fried rice, it is your call!

CEREAL PRAWN
Cereal Prawn (or Butter Oat Prawn) is usually made with butter, cereal or oats, curry leaves, chilli padi, garlic, sugar, salt, and oil. In Chinese tradition, Chinese Prawn will be one of the usual prawn dish on the table.

You have to try this mouth-watering dish! Feel the crunchy texture of the cereal and the sensation of the egg yolk. Pretty sure, you’ll be able to finish it by yourself!

YEE SANG
Yee Sang (also known as yusheng or yuu sahng or Prosperity Toss, is a Teochew-style raw fish salad. 
It usually consists of strips of raw fish (most commonly salmon), mixed with shredded vegetables and a variety of sauces and condiments, among other ingredients. 

Yusheng literally means “raw fish” but since when pronounced “fish” is sounded like  “abundance”, Yúshēng is interpreted as a homophone for Yúshēng meaning an increase in abundance. Therefore, yusheng is considered a symbol of abundance, prosperity and vigor.

Yee sang is often served as part of a multi-dish dinner, usually as the appetizer due to its symbolism of “good luck” for the new year. 

How to eat Yee Sang? Here’s the most unique part! All diners at the table then stand up and on cue, proceed to toss the shredded ingredients into the air with chopsticks while saying various “auspicious wishes” out loud. It is believed that the height of the toss reflects the height of the diner’s growth in fortunes, thus diners are expected to toss enthusiastically.
